This Scrambled Egg Sandwich recipe is one of my absolute favorites, probably a Top 5 favorite. I make it ‘just because’ it’s so delicious and not because it’s mealtime and I’m feeling lazy. My mom started making this scrambled egg sandwich when I was a child, as sort of a hold-over snack ’til dinner was ready. She only used one slice of bread and just folded it over to prevent the egg from slipping out. But by the time dinner was on the table, I really wasn’t hungry anymore and tonight’s intended dinner for me usually became tomorrow’s fare. Then my mom decided that it would probably make a fantastic full-fledged meal if she added bacon and cottage fries on the side. Our family was in heaven!
