This Shrimp Po-Boy Sandwich recipe is excellent.  The only thing that it does not include are instructions for deveining the shrimp before preparing.  I have included a short video below that will show you how very easy it is if you’ve never cleaned shrimp before. 

Please don’t prepare shrimp recipes without deveining and cleaning them first.  And don’t ever use those canned salad shrimps because they are not deveined or fresh.  Always purchase the freshest shrimp that you can find and prepare them yourself.  Never buy cooked, ready-to-eat shrimp as they will never be as tasty as you can accomplish yourself.  If you don’t live near a store that sells fresh shrimp, a great substitute will be the frozen variety that you can clean and cook at home.

This sandwich is one of my absolute favorites, probably a Top 5 favorite.  I make it ‘just because’ it’s so delicious and not because it’s mealtime and I’m feeling lazy.  My mom started making this scrambled egg sandwich when I was a child, as sort of a hold-over snack ’til dinner was ready.  She only used one slice of bread and just folded it over to prevent the egg from slipping out.  But by the time dinner was on the table, I really wasn’t hungry anymore and tonight’s intended dinner for me usually became tomorrow’s fare.  Then my mom decided that it would probably make a fantastic full-fledged meal if she added bacon and cottage fries on the side.  Our family was in heaven!
