This awesome version of Cranberry Sauce by Evanne Schmarder’s mom is a delicious recipe that everyone should at least have as a second choice on your dinner table.  I can say that it has become my family’s first choice!

Ingredients

1 3 oz pkg red Jell-O (your favorite flavor)
1 cup boiling water
3/4 cup crushed pineapple with juice
1 16 oz can cranberry sauce - with or without berries
1 medium apple - peeled, cored and diced
1/3 cup coarsely chopped walnuts (or your choice)

Directions

Dissolve gelatin in boiling water.  Add cranberry sauce and mash until dissolved.  Add pineapple and stir.

Pour into bowl or mold and chill approximately 2 hours.  Add diced apples and walnuts and chill overnight or until firm.

Makes 3-1/2 cups or 10 small servings.

I love many, many different types of salads but my favorite two are Caesar Salad and Cobb Salad.  Although this version isn’t an authentic Caesar… Chef Scooter S. McGee’s finished product is definitely yummy!  I hope that you will agree!

You just must try this Spicy Thai Steak and Rice Noodle Salad recipe!  It’s fast and easy to prepare but most of all… it’s delicious.  I have included Chef John’s peanut dressing recipe below the first video.  I hope that you enjoy this recipe!

If you love spicy food, this spicy Thai Papaya Salad, also known as “som dum”, will be a great addition to your ethnic recipe collection.

It’s a good idea to use the cherry tomatoes as shown in the video since they are more flavorful than the regular hot house variety.  If you are not a spicy type, you can just eliminate the pepper and still have a delicious salad.

I also see a “must have” kitchen utensil thingy that is pretty cool!  As I am a gadget gal by nature, if it slices, dices, or makes stringy papaya like shown on the video, I just need to run out and get one of those!  I hope you enjoy the recipe.

I hope that you’ll try this delicious Pickled Shrimp Salad recipe.  It’s light and tasty and makes a great summer salad.  Serve with buttered, crusty French bread and lemonade.  YUM!

The chickpea, also known as the garbanzo bean, makes a wonderful addition to salads.  Now, I’ve never eaten one from the pod, but seem to do just fine with the canned version.  This is an easy to make, very tasty and visually appealing salad.  I’ve even eaten this yummy salad as a main course.  I hope you enjoy it as much as I do.
