This tasty Mexican Chimichanga recipe is very similar to making a burrito. The major difference is that the burrito is not fried after assembling.
Here are the ingredients for your convenience:
4 Large Flour Tortillas
16 oz Chicken thighs, boned and skinned
½ cups (¼ pint) Refried Beans
½ cups (¼ pint) Chopped Onions
½ cups (¼ pint) Chopped Bell Peppers
½ tsp Chopped Garlic
¼ tsp Salt to taste
Pepper to taste
Guacamole
Sour Cream
Pico de Gallo or Salsa

This super quick and easy Scallops and Bok Choy recipe is healthy and quite tasty. The scallops also go great with sauteed spinach and garlic in case you’d like another side dish down the road.
When I prepared this dish, I added about a handful of grated carrots to the pan a couple of minutes before I added the bok choy which gave the recipe additional crunchy contrast.
